Omelet and veggie scramble!
Today I was craving sweet potatoes and eggs so I decided to make an omelet and a sweet potato & bell pepper scramble! I was already in the kitchen making some boiled chicken and rice for Ella because she has an upset stomach this morning so I went ahead and made my breakfast!
I like making veggie scrambles at all times of the day because their super filling and they taste so good! Plus, being a healthy choice is good too!
In my pan I used 2 tsp of olive oil and heated it on medium heat.
I took 1 green bell pepper and half of a sweet potato and cut them in circles and added them to the pan to begin cooking.
I usually add different seasonings while I cook. I ALWAYS use garlic powder, so I threw that in. I also used onion powder, a little sage, some black pepper, and a teeny bit of sea salt. I usually let them cook for about 15-20 on medium, stirring every so often. I like to cover them as well to keep the heat in and cook the potatoes all the way through.
After my veggies were done, I put them on my plate and added my egg mixture to the same pan and turned the heat down to medium low and covered it up. I used 2 eggs, a pinch of garlic powder, and a splash of almond milk. I didn't get any pictures of the omelet cooking because I was shredding chicken and mixing it with rice for my poor Ella girl. It's been a couple of hours since she ate it and she seems like she's already feeling better! Prayers for my baby girl!
But this is the finished product and it smelled and looked so good!!!

I added some swiss cheese on the inside of my omelet and it made it taste even better! I try to avoid most dairy foods because I'm lactose intolerant, but sometimes you just have to have it! haha
