Low Carb Hamburger Stuffed Bell Peppers!

I know it's been months since I've posted anything and I am so sad about it, but I have been unbelievably busy. I won't use it as an excuse anymore because I promise to post all the time now!

Anyways, today we had the cable guy come out and check on our internet. The connection has been so bad for so long and they finally sent a tech out to see what was wrong!

While he was working away and I had no cable or internet for about 2 hours, I decided to get out some bell peppers, thawed hamburger, onions, swiss cheese, and seasonings and make Low Carb Hamburger Stuffed Bell Peppers!

Ingredients:
2  large green bell peppers, halved lengthwise
1 pound ground beef
1/4 cup onions, chopped
1 clove garlic, minced
1/2 cup tomatoes, diced, about 2 ounces
Salt and pepper to taste
2 slices of Swiss cheese either grated or cut up into inch sized pieces

Directions:
Take a large pot and bring half a potful of water to boil then add in the halved peppers and boil for 3 minutes. Drain the water and remove the peppers. Add in hamburger, onions, and garlic to the same pot and cook until browned. Drain the grease and then add in tomatoes and the seasonings. Cook until the tomatoes are hot and then remove from heat and add in half of the cheese. Get the peppers and add them to a greased baking dish and fill them with the meat. Add the rest of the cheese on top and bake in the oven at 350 for 20-25 minutes.
