Roasted Veggie Meal Prep!
Over the last couple years, I've loved to meal prep. Obviously I don't do it all the time, but I love doing it as much as I can. Being a busy mom, running here and there, and trying to keep my house cleaned, and dividing up as much free time as I can between my two (very jealous of each other) dogs, I find meal prep is ideal!
Cooking and baking are literally two things that I LOVE to do. But mostly, I love to create things in the kitchen!
I decided to do a 3 day lunch meal prep with only veggies. I got some cauliflower, broccoli, Brussels sprouts, green bell pepper, and an onion to season and roast!

Anyways! When I want to roast Brussels sprouts, I like to put them in a medium sized sauce pan filled half way with water and a pinch of salt. It makes the brussels sprouts softer and less crunchy after you roast them in the oven.

Anyways! When I want to roast Brussels sprouts, I like to put them in a medium sized sauce pan filled half way with water and a pinch of salt. It makes the brussels sprouts softer and less crunchy after you roast them in the oven.
After I boil them for about 2 mins, I drain them and then add them to a cookie sheet with sides after spraying with some Pam.
While they are boiling, I like to cut up the other veggies and get them on the cookie sheets.
After I have them arranged the way I want, I preheat the oven to 375 and then get out my seasonings and start shaking all over the veggies.
I like to use Italian Seasoning and Garlic Powder. I very rarely ever put salt on anything I'm going to meal prep.
Once the oven is preheated, I pop them in for 20 minutes. Once the timer goes off, I like to take them out and give them a nice stir so the veggies will be roasted and crisp all over and they get cooked evenly.
I pop them back in the oven for another 10-15 minutes (depending on your preference) and then take them out and let them cool down for a few minutes before removing them and adding them to my meal prep containers.
Like I said earlier, I was only prepping for 3 days, but every other day. The days in between I like to do a nice big protein shake. I'm doing a new and intense workout regimen and diet to get my body wedding ready next Fall! Some days I will bake some chicken and throw it in or eat some tuna with it!
